Ameh Masslou’ (Boiled Wheat)
A bowl of Ameh Maslou (Boiled Wheat) is served to mark a Lebanese tradition celebrating Saint Barbra’s Day.
Ingredients
- 30g of Wheat
- 1 1/2 liter water
- Orange blossom water and rose water
- 1tbsp anise seeds wrapped in a muslin linen
- Bowl of sugar to sweeten (optional)
- 60g of each pine nuts, walnuts, blanched almonds
Prep: 10 Minutes
Cook: 60 Minutes
Servings: 8
Directions
- Put the Wheat, anise seeds in a medium saucepan.
- Fill the saucepan with water and bring it to boil using medium to high setting.
- Boil for about 10 mins.
- Remote scum then reduce the heat and let it simmer for 40 mins.
- Leave enough amount of its juice to serve it with.
- Discard the anise seeds and serve the wheat hot with a little juice in small bowls.
- Sprinkle few drops of each orange blossom water and rose water.
- You can add sugar or honey if you like it sweeter.
- Divide raisins and nuts equally and serve at once.
