
Maacroun Hobaichi is a traditional sweet, close to Maamoul, specific to the area of Ghazir. It is made with dough and filled with walnuts.
Louis Hariqa, a baker, came up with the recipe as a gift to the Hobaich family he used to work for, since they treated him very well. The traditional dessert was lost for some time, until Rosine found the recipe in Louis’ bakery. After she got married, people like her hairdresser encouraged her to make the Maakroun and sell them. That’s how she started making large batches for Easter and during the holidays. Then after her son, Yves, lost his job as an airline host because of COVID-19, he started helping her with marketing and enlarging her customer base.
